This monograph summarizes the factors which play a role in the fouling and cleaning of heat treatment equipment used in the dairy industry, and on this basis gives recommendations for minimizing fouling and optimizing cleaning in order to reduce the overall costs. It aims to provide the reader with a better understanding of the mechanisms and processes which lead to fouling and underpin cleaning. As the process of cleaning at pasteurization temperatures and all behaviour, both fouling and cleaning, concerning UHT conditions are not yet understood, this monograph defines current knowledge, rather than offering clear solutions.
