Factsheet of the IDF N° 30/2023: Standardized methods for the determination of alkaline phosphatase activity in dairy products: Comparison for effective use
The determination of the alkaline phosphatase (ALP) activity is used to verify the process of conventional pasteurisation of (bovine) dairy products. Currently, there are five IDF/ISO standardized methods for the determination of alkaline phosphatase activity. These methods differ in parameters such as analytical principle, sample scope and detection limits. This factsheet provides a comparison between these IDF/ISO methods for their effective use. It also describes some of the limitations of testing ALP activity.
