This Bulletin updates and summarizes the reported current status of the role of cultured milk foods containing selected probiotic microorganisms for human nutrition and health benefits. Focusing beyond the nutritional health features and benefits of fermented milks, important criteria for selecting probiotic microorganisms and their safety aspects are reviewed.
