After a review of literature on the significance of the somatic cell count of raw milk in relation to the quality of heat treated milk and milk products, the document describes recommended methods for somatic cell counting in milk (microscopic count; Coulter Counter, Fossomatic) and ends with a chapter on quality control in the laboratory.
