This monograph (the first ever on the subject) was compiled by various specialists, mostly from Australia and New Zealand and describes equipment and processes for the recombination of milks and creams, of evaporated and of sweetened condensed milk, of cultured milk products, of butter and of some types of cheese. Some 20 pages are devoted to raw material specifications (dairy products, vegetable oils, sucrose, water, seed lactose, salt, food additives), their packing and storage.
